5 spice salmon stir fry with glass noodles

I love big, bold flavours from around the world.

When I first discovered 5 spice I fell in love! The combination of fennel, anise, pepper and cinnamon blew my mind!

It’s now my go-to stir fry seasoning, but of course I have to jazz it up.




I always load up my stir fries with a variety of gut healing spices including:

  • garlic: antibacterial, antifungal and immune boosting

  • ginger: antibacterial, anti-inflammatory, pro-circulation, pro-kinetic (helps move your bowels!)

  • cayenne and/or hot sauce: pro-circulation, immune support, antibacterial

  • fennel: carminative

  • cinnamon: antibacterial, pro-kinetic, anti-inflammatory, balances blood sugar

So as you can see, if you’re fighting a cold or just feeling off, this spice blend will help you feel better, fast!




You can use gluten free rice vermicelli, but I love glass noodles, which you can find in any international section. They’re made of bean flour.




Ingredients:

  • 1 lb fresh salmon

  • 2 tbsp sesame or coconut oil

  • 2 tsp 5 spice blend

  • 1 tbsp grated, or finely diced fresh ginger root

  • 3 cloves garlic, finely diced

  • 1/8 tsp cayenne or sriracha, to taste

  • about 1/4 cup GF soy sauce

  • GF teriyaki or hoisin sauce

  • 1 package baby bok choy

  • 2 red bell peppers, sliced

  • yellow onion, thinly sliced

  • 2 cups mushrooms, sliced

  • 1 head of broccoli, chopped into bite-size pieces

  • 2 “nests” of glass noodles

  • salt and pepper to taste







Directions:

  1. Preheat the oven to 400 F. Fill a medium sized pot with water and bring to a boil.

  2. Chop all vegetables and set aside. Heat a large pan or wok on medium high heat and add oil of choice.

  3. Add garlic and ginger and onion, then add the soy sauce, carrots, broccoli and peppers. Add the five spice. Stir fry until softened, then add the bok choy. Add the teriyaki sauce, stir to coat and set aside.

  4. Once water is boiling, add glass noodles, cover and take off the heat. Set a timer for 15 minutes.

  5. Season the salmon with salt and pepper. In a small oven-proof pan on high heat, sear the salmon on both sides until golden. Place in the oven for about 10 minutes, or until cooked through.

  6. Once the timer goes off, drain the noodles and set aside.

  7. When ready to eat, toss the veggies with the noodles and top with the salmon. Enjoy!
